From Fine Dining to All Day: Reinventing Dishes, Maintaining the Essence

The prestigious chef Albert Borronat will present two dishes that start from the same reference but take different directions. He will show how a dish can be reinvented from the Fine Dining style, with the French savoir-faire of his time at Ambassade de Llivia, to the All Day concept of his current establishment Colmado Llivia. A demonstration that reflects how it is possible to turn professionally without losing the essence, adapting culinary art to different contexts and audiences.
