I am Iñigo Lavado, and this is my story.
Cooking is my passion. I am excited by challenges, and I like to share and enjoy it inside and outside the restaurant.
I shared the kitchen with great chefs such as my teacher, the great Master Luís Irizar. Also with Martín Berasategi, Ferrán Adriá, Pedro Subijana and Alain Ducasse… Years of learning, effort, demand and absolute dedication. Now I run Iñigo Lavado Restaurante in Irún and in the spring of 2025 we will move to the Luze San Sebastián hotel in Igeldo where our new project will see the light of day: Itzulil.
I also have a long and close relationship with Makro, a wonderful travelling companion for 11 years.
We like to define ourselves as a space of creativity where a large number of projects and synergies have arisen and where we are constantly looking for a different way of approaching gastronomy while maintaining the essence and identity of our traditions and our territory. Adding elements that enrich our foundation.
