Mario Tofe is sommelier and head waiter at Èter Restaurant in Madrid. Trained at the Chamber of Commerce, he became a sommelier and began to work on the restaurant’s menu, turning it into a very special signature wine cellar that covers different areas of the world and Spain. Together with his brother Sergio, they undertook the Éter project in 2021 and, today, the restaurant has become one of the capital’s must-visit gastronomic proposals.
